The plan for this week is a work in progress. It involved more prep than I think I would like to do in the future. I spent several hours on Monday cooking, and I really would prefer to break it up over several days more. The problem is managing my energy levels on a daily basis. I have a tendency to overdo it on days when I do have energy!
